Polyphenole hemmen unspezifisch hydrolytische Enzyme im Verdauungstrakt, z.B. Amylasen, Lipasen, Proteasen → der Verdauungsprozeß wird verlangsamt → die postprandiale Blutkonzentration an Monosacchariden, Fettsäuren und Aminosäuren wird gesenkt.
